Delamain Pale and Dry XO has been matured for a quarter of a century to produce a very fine and elegant Cognac. With a distillate from Ugni Blanc and Colombard grapes, it comes from the Grande Champagne - also known as the Premier Cru.
Aged on average for 25 years, the Pale & Dry XO Cognac is known for its pale color that is much lighter than you'd expect of a Cognac of this age. This is due to the natural phenomenon of the eaux-de-vie being matured in very old casks. The word 'dry' is somewhat of a paradox, because it's actually referring to the natural sweetness of the liquid.
The end result, however, is a Cognac that's truly round, intense, and mellow. It offers a real depth of character, combining delicacy with amazing fruitiness. They mature under optimal conditions in old barrels. The distillation is carried out gradually. Eaux-de-vie of the same age is then blended.
